Two-Star Michelin Chef, Benoit Vidal Returns to Topaz for Another Gourmet Night

June’s edition of Les Étoiles Michelin du Topaz warmly welcomes back two-star Michelin chef Benoit Vidal to cook-up a delicious seven-course menu.

Benoit Vidal is the owner and chef of Atelier Edmond, a chalet-style restaurant on the slopes of Val d’Isère in the French Alps. Here, Vidal won both his Michelin stars in 2012 and 2015.

Renowned for his distinctive blend of mountain and Mediterranean instincts and the supreme harmony and elegance of his dishes, Vidal subtly uses specific local produce to highlight flavours by using one ingredient to accentuate another. The Michelin Guide itself describes his work as “firmly anchored in the present and strongly aromatic. The plates are so beautifully presented that you barely dare touch them”.

Vidal has trained with Michel Trama, Michel Guérard, one of the founders of ‘nouvelle cuisine’ and mentor to the likes of Alain Ducasse, Gérald Passédat and Sébastian Bras, and Régis Marcon for whom Vidal worked as head chef in his eponymous restaurant.

Benoit is an enormous fan of citrus fruit, which feature in many of his dishes, and unusual flavours such as hay. His signature dishes include unexpected combinations such as crayfish infused with sweet woodruff, a version of which will be served at Topaz. Diners will also be treated to a tangy grilled trout with crisp tapioca pearls, and rice vinegar, ginger and wasabi, and the richness of roasted duck breast complimented by the freshness of beetroot, hibiscus and ginger, and much more besides.

Chef Vidal will arrive in Phnom Penh several days before the gourmet evening so that he can train the Topaz team in the methods, techniques and skills necessary to create his dishes. Inviting recognised world-class chefs such as Benoit Vidal is part of the strategy for continuously raising the Topaz team’s skills, knowledge and standards and his time there will create a legacy that will continue long after he has parted.
