Two Stars – Seven Courses – One Night Only
This October 12 at Topaz Chef Guy Lassausaie of Lyon will be leading the latest edition of Les Etoiles Michelin du Topaz with an incredible seven-course dinner that he has put together specially for this evening. A first for Topaz, Chef Lassausaie has not one but two Michelin stars as well as being selected as Meilleur Ouvrier de France in 1993.
Guy Lassausaie is from Chasseley in Lyon where he operates his restaurant from the same building in which he was born. The fourth generation of the Lassausaie family to run a restaurant on this premises, he took over the family business in 1984, at just 23 years old, since when it has flourished. During his tenure at Topaz, Chef Lassausaie will work with Executive Chef Sopheak Pov and his team, sharing his ideas, techniques, secrets and inspirations during a series of dedicated training sessions.
Chef Lassausaie’s menu for Topaz inspired by some of the dishes that have contributed to his Michelin awards and numerous other accolades. The seven course meal features an opener of Burgundy-style egg in its shell with frog’s leg, porcini mushrooms and a sweet and tangy roasted garlic foam crown, a luxurious salad of lobster, artichoke and mushroom sprinkled with truffle shavings, scallops seared to perfection in brown butter, served on a bright floral cardamom-squash mousse, before melting into French venison in a spiced crust, and much, much more
Each of the evening’s dishes will be carefully paired with a selection of wines from Topaz’s own stock, including a 2008 Saint-Emilion Grand Cru from Chateau Patris and the House Champagne from Duval Leroy. Wines from the Burgundy region, just to the north of Chasselay, help to ensure diners experience a true taste of the region.
