Phuket Avista Hideaway’s new executive chef, Tim Westaway has plans to take the resort’s dining to a new level. Words by Coral Glennie.

Scaling new heights is nothing new to Avista Hideway’s new executive chef Tim Westaway. Anyone who has served an apprenticeship under Antony Worrall Thompson and served diplomatic officials in the former Soviet Union knows something about taking on a challenge.

Still the chef who was born in Los Angeles before attending culinary school in New Orleans and joining the Omni Royal Orleans Hotel has never worked at somewhere quite as striking as Phuket’s Avista Hideway.

“I’ve been cooking professionally now for over 30 years, and I have never seen a resort as beautiful and well-designed as this one,” he says. “Avista is visually stunning, especially at night, and I want my food to reflect this warming and awe-inspiring natural ambience.”

Tim WestawayWestaway is designing an a la carte menu that will be served at altitude in the starlit seclusion of the rooftop of guests’ own personal villas. The cuisine will be a blend of, classic European fine dining traditions with the explosive and bold culinary style of Pacific-rim fare, comprising flavours and techniques from Hawaii, Southeast Asia, Polynesia and Westaway’s native California.

“My style of cooking is aimed at providing a little something for everyone,” he says. “For example, the fine dining menu at the Avista Dining Room will be heavily based on European dishes, but will utilise the fantastically fresh fruit and vegetables that are on hand in Phuket to give the food a distinctive, tropical Asian twist.”

Combining food with his passion for travel, Westaway has worked across the globe in various roles, including being one of the first American chefs to serve diplomatic officials in the USSR back in 1989.

In addition to evening meals, Westaway promises to bring a unique approach to early morning meals at Avista Dining Rooms, with the aim of seeing the restaurant crowned the best breakfast buffet in Phuket. He will also be in charge of the resort’s two other restaurants – barbeque and grill restaurant Sizzle, and Rendez-Vue, an upscale eatery serving “traditional pub classics”.
