Where’s the beef? Better yet, forget the beef and look out for something whiter and lighter at Reflection’s Poultry Promotion from 13 – 19 September. A celebration of all things fowl, the Caravelle chefs are master-minding new treatments for duck, chicken, turkey, quail and roast pigeon. The appetizers range from pan-fried duck liver medallions to smoked free-range chicken on toasted sourdough, setting the stage for five exquisite main courses. To wit, seared duck liver roasted duck breast and duck leg comfit, wild quail and forest mushroom ragout vol au vent and so on. Choose any three courses for VND 810,000++ and four courses for VND 938,000++
